Add sugar, cocoa powder, butter, and milk to a dutch oven or medium saucepan.
On medium heat, stir the sugar mixture until it reaches a rolling boil. Let the mixture reaches a full rolling boil for exactly 2 minutes. Set a timer!
Remove from heat and add the vanilla extract, Nutella, quick-cooking oats, and nuts *optional.
Stir with a rubber spatula until the mixture is completely mixed together.
Use a medium-sized cookie scoop to scoop out the cookie dough and drop Nutella cookies onto a sheet of parchment paper or Silpat on a large baking sheet.
Using a large cookie scoop will result in larger cookies, but fewer of them.
Let no-bake cookies set to cool completely before eating.

These oatmeal cookies come together fairly quickly, so don’t take your eyes off of your pan.You should easily be able to double or triple the recipe if using a dutch oven. They’re typically large enough to handle the extra cookie ingredients.Make sure your mixture reaches a boil over medium heat for exactly 2 minutes to ensure your drop cookies are set properly.Use quick oats! Old-fashioned oats, while delicious, won’t absorb the melted sugar well enough and could result in a drier cookie. If all you have is old fashioned oats, then you can pulse them in a food processor to break them down further. I have not tried this method, however.Enjoy these Nutella cookies with a mug of creamy milk or a bowl of french vanilla ice cream.
