Everyone's favorite summer bonfire and camping treat! These s'more treats have leveled up into gooey, melty, and toasted brownies! They're especially welcoming in the winter when you're craving that summer vibe.
S'mores are the sloppy joes of dessert! If you're worried that your littles are sticking their s'more fingers on everything, a s'more brownie could be the way to go. Maybe I'm still traumatized by getting a whole, freshly toasted marshmallow stuck in my hair.

Important Ingredients with Substitutions

- Graham crackers - With so many flavor options, pick your favorite! Nothing wrong with the original though. You can buy pre-made graham cracker crumbs too!
- Chocolate for brownies - Milk or semi-sweet chocolate chocolate chips or chopped-up chocolate bar. This chocolate will be melted.
- More chocolate for brownies - Mini chocolate chips or chocolate bar chopped into small pieces. These bits will be left whole to melt throughout the cooked brownie.
- Large Marshmallows - Use large or even square marshmallows. They should be big enough to fill out the space on top of the brownies. If all you have are small marshmallows, don't bother cutting them. No one has time for that!
- Garnish - Grated chocolate, Hershey bar squares, crumbled graham crackers, or even a mini Reeses peanut butter cup for garnish.

Instructions For S'mores Brownies with a Graham Cracker Crust
Preheat the oven to 325F, and prepare your baking dish with nonstick spray.

Step 1: In a food processor, add the graham crackers and salt. Pulse until they've become small crumbs. Pour in the melted butter and pulse again until the crumbs are coated.

Step 2: Add the graham cracker crumbs to the pan and press into the bottom to form the crust. Bake for 7 minutes, set aside to cool while you prepare the brownie mix.

Step 3: In a saucepan, add butter and chocolate. Over low heat, stir until completely melted. Set aside to cool.

Step 4: In a small mixing bowl whisk together the sugar and eggs.

Step 5: Pour the cooled chocolate into the egg mixture and whisk until fully incorporated.

Step 6: Add the flour and salt and mix until combined.

Step 7: Add the mini chocolate chips and mix again.

Step 8: Pour the brownie mix over the cooled graham cracker crust. Bake uncovered for 22-25 minutes, or until a toothpick inserted comes out clean.

Step 9: While the brownies are baking, prepare the marshmallows by cutting them in half lengthwise.
Once the brownies are baked, place the marshmallows, cut side down, on top of the brownies.

Step 10: Broil the brownies topped with marshmallows for roughly 2 minutes or until the marshmallows have slightly browned. Keep a close eye on this as they can burn very quickly.
Level Up with a Top Tip!
Hint: While broiling the marshmallows in the oven, have a seat in front of the oven to keep an eye on those babies. They're done when they have reached that delicious toasty brown color. When in doubt, take it out!
Recipe Variations
Just a few ideas to switch up this recipe!
- Marshmallow fluff - Instead of individual marshmallows, spread a healthy, but not so healthy, layer of marshmallow fluff on top. Torch or broil to golden. This option could be a lot messier, however.
- Oreo crust - Keep the pretty layers intact by using golden Oreos as the brownie base!
- Sweet & Salty - Replace the graham cracker crust with ritz crackers for a sweet and salty treat. This is a popular option at our house when making s'mores.

Storage Recommendations
Once the s'more brownies and the gooey marshmallows are cool they can be stored in an airtight container at room temperature for up to 4 days, and up to a week in the refrigerator.
Can I freeze s'more brownies? Yes! I recommend storing these in individual portions. This makes thawing and enjoying later an easier process. Once your brownies are cooled cut into preferred portions. Wrap each portion in plastic wrap, then store them all in a freezer safe container or bag. Store for up to 8 months.
Thaw in the fridge for a few hours before enjoying.

Level Up With Expert Tips & Tricks
When pressing the graham cracker mixture into the pan, use the bottom of a glass or measuring cup to ensure it's packed evenly.
Make sure to keep an eye on the marshmallows during the final baking step – they can go from perfectly toasted to burnt very quickly!
Alternative to a broiler - Use a kitchen torch to lightly toast those marshmallows before serving.
Double the graham cracker crust for a thicker base.
